Chilli Con Carne

CHILLI CON CARNE (SERVES 4)

INGREDIENTS

1 TBSP OIL
1 LARGE ONION DICED FINELY
1 RED PEPPER DICED FINELY
2 GARLIC CLOVES CRUSHED
1 TSP HOT CHILLI POWDER (OR TO TASTE)
1 TSP PAPRIKA
1 TSP GROUND CUMIN
500G BEEF MINCE
1 OXO CUBE
400G TINNED TOMATO
0.5TSP DRIED MARJORAM
2 TBSP TOMATO PUREE
410G TIN RED KIDNEY BEANS (OPTIONAL)

METHOD

Heat oil and gently fry inion for 5 mins until squidgy

Add garlic, red pepper, chilli, paprika and cumin. Cook for another 5 mins.

Brown the mince in the mixture

Make 300 ml of stock from cube and add this and tomatoes and marjoram to the mix

Add tomato puree and stir well

Bring to boil then reduce heat and simmer for 20 mins

Drain and rinse the beans and add. Bring to the boil  again and simmer for a further 10 mins
