Chicken Curry


1 tbs coconut oil
1 small red onion
1 clove of garlic
250g chicken breast
1/2 red pepper
1 tbsp. mild curry powder
Handful of baby spinach
Squeeze of lime


Heat the coconut oil then add the onion and cook for 1 minute then add the garlic and ginger. 

Then add the cubed chicken breast cook for 3 minutes add the red pepper and the curry powder and stir fry until the chicken is cooked through.

Add the spinach and cook until wilted.

Serve with a squeeze of lime
