Perfectly Poached Eggs
1 egg per person
1 slice of wholemeal seeded bread
1 tsp lime juice
Salt and pepper
Boil a sauce pan of water, then turn the heat down slightly until the water starts to simmer. Break an egg into a small cup.
Make a whirlpool with a spoon in the water, really get the water going, and then drop in the egg. Cook for around two and a half minutes, until the white is set and the yolk is still runny, remove the egg from the pan with a slotted spoon so the water drains away.
Toast the bread. Remove the stone from the avocado and mash up the flesh, and add some lime juice and seasoning. Spread the avocado onto the toast and top with the poached egg.
